Totally Cheating Shepard's Pie:

1 lb ground turkey

1 package instant mashed potatoes

1 small onion

1/2 cup chopped parsley (fresh is best.)

1 cup frozen peas and carrots

1 tbs Worcestershire Sauce.

1/2 cup beef broth

.....

Pre-heat oven to 400 degrees Fahrenheit. Brown meat and saute onions. Prepare mashed potatoes according to directions. Spoon meat and onion mixture into a glass or metal baking dish or cake pan with the peas and carrots, drizzle with the broth and Worcestershire Sauce, and then spread the mashed potatoes across the top with a fork. Bake until the tops of the mashed potatoes start to brown.

Get chicken or turkey breasts. Slice them in bite-sized chunks and put them in a pan on medium heat. Don't use oil or any kind of fat in the pan.

Meanwhile, cook some pasta. I like to use gnocchi for this, but really, most kinds of pasta will do. Cook them al dente; it's very important that they shouldn't be overcooked.

When the chicken is really golden brown and there's a lot of chicken stuff sticking to the pan, pour cream on it (whipping or half and half, depending how much you watch your fat intake). Scrap the bottom of the pan; the cream should brown a little. Salt and pepper to taste.

Add the pasta, and let the cream thicken for a couple of minutes. Serve piping hot.

Premade ingredients okay?

1 (9 oz) box of refrigerated or frozen tortellini
1 jar of pasta sauce
cheddar & mozzarella cheese

Layer the tortellini, pasta sauce, and cheese in a baking dish. Bake, covered with aluminum foil, at 350 (F) for about 30 minutes (until all the cheese on top is melted.) Enjoy!

This is probably more doable for new cooks with rice cookers.

Basic ingredients:
Enough rice for two
As many thin slices of onions as you like
Chicken or any kind of meat, cut into large chunks
A spice mixture -- which may consist of: cumin seeds (about a teaspoon), cloves (2), star anise (1-2), cardamom pods (2), cinnamon stick (about an inch) and any other whole spices
Chicken/veggie stock
Oil or ghee -- two or three tablespoons for one onion

Heat oil or ghee in a saucepan (or a pot). Fry the onions until it's soft. Add the spices and stir, cooking until the onions are just about turning brown. You can also add any kind of ground spices here, e.g. chili powder etc. Tip in the rice and stir until well combined, then add the chicken meat.

At this point, you can transfer the mix into a rice cooker (or just continue cooking it in the same vessel, assuming that you're using a small pot). Add enough chicken stock for the rice to cook without burning -- and however much salt you like -- and let the rice cooker do the rest. If cooking on stovetop, once the rice starts to bubble, cover the pot and turn the heat down to a very low flame and cook until rice is done. The bottom of the rice may get brown and slightly crispy, but it's not inedible. :D

As I said, this is a really forgiving recipe. You can add spices to your taste, multiply the amounts with ease (large servings are best cooked with chicken on the bone), and throw in veggies like tomatoes and peas (taking into account the cooking time). Serve it with a vegetable curry or eat it on its own, it's all good.

This mac and cheese works great with skim milk and 2% milk cheddar cheese, for the record! It's actually a pretty healthy recipe with low carb noodles and low fat ingredients but tons of flavor.

Zesty Macaroni and Cheese for One

2 tablespoons butter or margarine
1 tablespoon all-purpose flour
1/4 teaspoon salt
pinch pepper
1/2 cup milk
1/3 cup shredded cheddar cheese
1/4 teaspoon ground mustard
1/4 teaspoon Worcestershire sauce
dash of hot sauce
1/4 cup elbow macaroni -- cooked and drained
a sprinkle of panko bread crumbs

In a saucepan, melt 1 tablespoon butter; stir in flour, salt and pepper. Whisk in milk until smooth. Cook and stir for 2 minutes. Reduce heat to low.

Add the cheese, mustard, hot sauce and Worcestershire sauce; stir until cheese is melted. Add macaroni. Transfer to a non-stick 1 cup baking dish. Sprinkle the panko bread crumbs on top.

Bake, uncovered, at 350 F. for 10 minutes or until the cheese is melted. If you want the bread crumbs to brown, mix them with some melted butter in a pan before adding them.

A sausage and peppers plus spuds recipe I developed last winter:

3 medium-sized potatoes, scrubbed or peeled
1 bell pepper of your desired color
1 package of your favorite kind of sausage
Salt, pepper, and other seasonings of your choice
A bit of oil


1) Cut the potatoes into small chunks. Mix with oil and seasonings in glass or ceramic baking dish. Roast at 350 for 25 minutes or until golden brown.

2) While the potatoes are cooking, cut sausage into bite-size pieces, dice pepper, and sautee in large saucepan. Add 1/4 cup of water to avoid burning or sticking.

3) When the potatoes are done, add them to the sausage and pepper mix. Stir well.

Optional: 1/3 cup French's French Fried Onions for extra crunch.

Made this a few weeks ago:

I like to call this one "Hey We Have Tarragon And Broccoli And Carrots We Need To Use Before They Go Bad"
When I made this I used pork, but it'd be better with chicken. Or fine with no meat at all.

- 1/2 lb. chicken breast meat, cut into chunks
- 1 big head broccoli
- 4 or 5 carrots
- a couple handfuls of shiitake mushrooms
- 3 small cloves garlic, finely chopped
- olive oil
- big bunch fresh tarragon, coarsely chopped (be sure to get the stems out)
- whole wheat penne pasta
- s&p to taste
- like a pat and a half of butter
- parmesan or perrano cheese

Marinate chicken in olive oil, salt & pepper, and 1 clove of garlic (finely chopped). Let that sit for a while as you chop the broccoli, carrots, and mushrooms.

Get the pasta started with the pot of water and the boily and the stuff

Make a mixture of olive oil, 2 cloves fine chopped garlic, s&p, and a few pinches of the tarragon and set that aside in a little cup or something

Saute chicken chunks in butter. (I added a splash of wine; no idea if that helped) When chk is just starting to cook through, add in carrots; cover. A little later, add broccoli and mushrooms; cover again. When it looks all bright and purty, toss in about half of the chopped tarragon and turn the heat down low.

Hopefully by now the water is boiling, so the pasta and meat + veg can do their thing at the same time.
Anyway, drain the pasta and fold in the meat and veggies, slowly adding in oil+garlic from that cup earlier, plus the rest of the tarragon. When you're done with that, grate just a little bit of the cheese and keep folding that in AND THEN YOU NOM THAT SHIT

"vegetarian" white clam sauce

I make it like this because I dislike the rubbery texture of clams but I like the flava of clam sauce.

1/2 box long skinny pasta (I like Barilla's spaghetti rigate myself for this but you can use pretty much anything)
olive oil (the best you have because you can taste it in this)
garlic (fresh)
curly parsley (fresh)
white wine (does not have to be great)
clam juice
butter
optional non-vegetarian add-in: mini-cubes of pancetta (Citerrio has great pre-cut)

1) Boil 2-3 qts water in a good-sized pot.
2) In a separate pan, heat olive oil over low-med heat. start with like a teaspoon or so.
3) Crush garlic into heated oil (a garlic crusher is a great little tool. I used to chop it but it's not the same at all). Stir for 1 minute - do NOT allow it to brown or burn. (I've thrown it away at that point if that happens and started over because the taste is ruined.)
4) Chop parsley (doesn't have to be too fine) and add to pan.
5) Cook for 1-2 mins until parsley is soft
5a) (optional) add pancetta & cook for 1-2 mins

[meanwhile, your water must be boiling by now. salt liberally and add pasta]

6) Add wine (about a tablespoon - I eyeball it)
7) Cook down for 2-4 mins until texture has thickened.
8) Add clam juice and cook down again 3-4 mins until texture has thickened.
9) Add butter - about 1-2 tbs.
10) Cook down yet again, 1-2 mins.
11) Add one last hit of olive oil - about 1 tsp. Cook for just a little bit, 1 min maybe. If pasta is not done yet, turn off heat on sauce.

When pasta is al dente, drain and put it into the pan with the sauce. You can cook the pasta a bit in the saucepan to make the sauce sink in, or just toss it with the sauce with the heat off.

I had it tonight and it is the motherfucking yum, yo.
