Literary Award Wank
Lambda Literary Foundation: We're changing our submission criteria. From now on our GLBT literary award will only be given to self-identified GLBT authors.



Alan Chin: My honest opinion? The Lambda Foundation is run by and for a bunch of old queens in NYC who'd like to keep it a private party.

Dear Author: First of all, is LLF going to require a dick check (or the female equivalent)? How are they going to do that? How are they going to prove, for example, that Josh Lanyon is a man and/or how is he going to prove it?

Teddy Pig: What this new wording says to me is gay people can’t “cut it” in the “real literary world” because I guess their gayness permeates their writing so Lambda Literary’s main purpose now is to mindlessly cheer lead heterophobia so us poor unappreciated gay folks can fight the system or whatever.

Fiona Glass: Where does this end? Should black authors only be able to write about black issues? Should women only write about other women, and children about children?

Erastes: The foundations statement HAS BEEN CHANGED. That is my point - they've changed the rules because het women are writing better books than gay men (their words, not mine) and are WINNING the awards.

Evil Chocolate Cake

1 coffee mug
4 tablespoons of flour
4 tablespoons of sugar
2 tablespoons of baking cocoa (preferably good stuff, not Hershey's)
1 egg
3 tablespoons of milk
3 tablespoons of vegetable oil
3 tablespoons of chocolate chips (optional)
1 small splash of vanilla

Oil or spray the inside of the mug. Mix the flour, sugar, and cocoa. Add the egg and mix well. Add the milk and oil and mix well. Mix in the chocolate chips and vanilla. Microwave for three minutes, and you have 1-2 servings of hot chocolate cake. (The cake will rise past the sides of the cup.)

Chili Relleno Bake

A simple, tasty vegetarian dish that's very easy to make.

Ingredients:

3 large eggs, separated

3 tablespoons all-purpose flour

1 can (7 ounces) diced green chiles

1 can (16 ounces) vegetarian refried beans

2 cups (8 ounces) shredded cheese (The recipe calls for Pepper Jack, but I used a colby/Monterey Jack mix)

Instructions:

1. Preheat oven to 375

2. Spray 8x8-inch glass dish with cooking spray (If using a metal dish, reduce heat to 350 or so)

3. Beat egg whites in small bowl until stiff peaks form (Not too small though. I learned that the hard way.)

4. Whisk egg yolks in a separate bowl; fold into egg whites

5. Add flour into eggs until just combined

6. Fold in green chiles

7. Spread beans over bottom of dish

8. Top with half of egg mixture, spreading evenly

9. Sprinkle with half of the cheese, then remaining egg mixture and remaining cheese

10. Bake uncovered for 30 minutes, or until golden brown

The recipe claims to serve four, but I can eat half by myself if I'm hungry enough.

Cold-Smiting Chicken-Leek Soup

2 chicken breasts
1 Hungarian pepper
4 leeks
2 biggish cloves garlic
1-2 tbsp butter (or margarine; I like butter more for the flavour)
salt
pepper
paprika
chicken stock (in bouillon cube form or otherwise)
1 tbsp lemon juice (optional)

Get your big soup pot out of the cupboard at put it over medium heat. Plunk your butter in and let it melt. Squish or chop-really-finely the garlic cloves, and toss those in with the butter. Add a few grinds of pepper and stir that around.

Now chop up your leeks and pepper! Thinnish leek slices and pepper slices work best; they cook faster. (DO NOT and I mean NEVER touch your eyes or nose when you are handling Hungarian peppers - they're no jalapenos but they ARE spicy. Yes, this is the voice of experience. My nose itched. D: ) Pitch those in with the garlic and stir 'em like a mofo! Add your paprika, and more pepper if you want here. While this is cooking, cut up your chicken into half-inch-ish pieces.

When the leeks get smaller and translucent, dump the garlic-leeks-and-peppers combo into a good-size mixing bowl and set it aside. Make sure some of the butter/leek juice stays at the bottom fo the bot; you're going to use this to cook your chicken in! Plunk the chicken into the leek/garlic butter and poke it around until it's cooked. Season as you like; I used just a little pepper and about a tablespoon of lemon juice.

Dump your veggies back in with the chicken. Stir like a maniac until everything is incorporated. Now add your broth! (Two cups worked for me; you want to cover all your veggies. If you like a broth-ier soup by all means use more.) Cover the pot and let it all simmer a bit on low heat (I only waited five minutes lolimpatience).

Serve with good crusty french bread. Laugh as the cold germs flee!

(This is modded from a cock-a-leekie recipe my dad improvised; if you wanted to make that, all you'd likely need to do with this is omit the lemon juice and add the prunes.)

I offered to bake for The Darjeeling Café, primarily making desserts that feature some sort of tea as an ingredient. Mary Beth was all over this. Today, I made one of my personal favorites, a cake I call my Heaven and Earth cake because it's such a lovely shade of jade green and one I accent delicately with powdered sugar, shredded coconut, and/or a cloud of whipped cream. (I only had powdered sugar and whipped cream this morning but I'll have shredded coconut.)

I'm absolutely delighted to report that the cake came out of the oven at 11:30 this morning and was entirely gone by 1:00 with rave reviews from the folks who tried it. \o/ I wasn't expecting such a run on it...I suppose that means everyone else who pops by the café only gets the option "or death."

Heaven and Earth cake

5 or 6 eggs, separated
1c brown sugar (OR 3/4c white sugar OR 3/4c xylotol if you need a sugar-free version)
pinch of salt salt
1/2c canola (or similarly light) oil
1/3c coconut milk
1t vanilla extract
2t baking powder
1c white flour (OR light spelt flour OR gluten-free cake flour if you need a wheat- or gluten-free version)
3t to 1/4c matcha (a green tea powder that's basically the Japanese answer to the double espresso.)
2T dry shredded coconut + 1t powdered sugar (optional)
1/4c powdered sugar (optional)
whipped cream (optional)

Preparation

1. Preheat oven to 350 degrees. Prepare an angel food cake pan (or a 9-inch cake pan), either by greasing it well or lining it with parchment paper.
2. Crack eggs into 2 separate mixing bowls, with the egg whites in one bowl and the yolks in another.
3. Beat the egg whites until stiff and set aside. (Kitchen Aid mixer at work FTW!)
4. Add the salt and sugar (or sugar substitute) to the yolks and stir until smooth.
5. Add the coconut milk, oil, and vanilla to the yolks, and beat (or stir) until mixed in.
6. In a third bowl, stir together the flour, baking powder, and matcha. Now add (or sift) this into the yolk mixture. Stir well or beat to incorporate. At this point, the batter will turn the most awesome shade of green.
7. Now fold in the egg whites, gently stirring and mixing by hand just until egg whites have dissolved into the batter. Be careful not to over-mix.
8. Pour the batter into the prepared pan and place in the oven for 25 to 35 minutes (depending on your oven; I needed 40 minutes with the oven at work.) Check cake after 25 minutes by inserting a toothpick or a fork into the center of the cake. If it comes out clean, it's done. The center should form a peak. If it's still concave, it's not done.
9. While cake is cooling in the pan, toast the coconut. You can do this in the oven or in a dry frying pan over medium heat. Bake or stir constantly until coconut turns light golden brown.
10. Decorate the cake with a sifted powdered sugar, the sprinkling of toasted coconut, and/or whipped cream. Serve warm or at room temperature. OM NOM NOM away! :D

Easy rice dishes.

My favorite thing to make lately is (and portion this according to your needs):

-Ground beef browned with yellow curry, chili seasoning, and large chunks of onion.
-Lay over a bed of rice.
-With sweet and sour, Yoshida's, soy sauce, and sesame seed oil poured over until you find a suitable taste (I prefer extra sesame seed oil).

OR easy one bean chili:

-1 half bell pepper (green makes it look prettier, but I think red tastes better)
-1 can tomato sauce
-1 small can of tomato paste
-1 can stewed tomatoes with green chilies
-1 half large onion
-1 can of beans (I use kidney)
-Chili seasoning, garlic powder, cyan pepper, brown sugar

If you decide to add ground beef, brown beef with onion and bell pepper. Cook about two cups of rice. While rice is cooking, add the remaining of the ingredients to the beef/veggie mixture and bring to a boil, then simmer until rice is done cooking. Place over rice, add cheese if you're a cheese addict, and eat as is or roll into tortillas.

Should make about 3 servings.
