Over in [info]hp_britglish, schemingreader makes the mistake of asking what the stuff you spread on top of a cake is called. Hint: It ain't "frosting".

[info]oncelikeshari thinks that butter icing is evil and wrong and should be stopped, or that it doesn't exist. I'm not entirely sure.

Either way, I want cake. :(

Argh!

Now I want... all of it. Butter cream, and Ganache, and the sort of meringue-ish stuff called Seven Minute Frosting. (Not Sea Foam, though, which is a brown sugar version of Seven Minute, and is narsty). Also plain glaze, which is the powdered sugar and water stuff, or cream glaze, which is powdered sugar and whipping cream. Almond filling, which is not as smooth as marzipan. Royal Icing, even if it will break one's teeth after a day or so.

A jelly roll with raspberry jam and real custard. Or a nice Sachertorte, with apricot jam filling and chocolate glaze... or a maple bar.

(And I can't have any of them because I want to live forever. But what good is eternity without cake?)

You know the bit in Stranger than Fiction where Maggie Gyllenhaal talks about Lemon Chiffon Cake with Zesty Peach Icing and just the name of it is nearly enough to DESTROY you with DELICIOUS?

So they put buttercream on carrot cake in England? I'm used to carrot cake recipes that use a cream cheese frosting, like this one. Also, I think I have an unopened container of store-bought chocolate frosting at home, and thanks to this wank there's a really good chance that the first thing I'm going to do when I get home is open it and eat several spoonfuls.

So I'm confused: is [info]oncelikeshari convinced that buttercream icing doesn't exist at all in Britain, exists only on terrible store-bought cakes, or is just American even if it exists in quantity? Or maybe it's just an abomination unto the Lord?

This wank is making me think about my leftover birthday cake: buttercream icing on two layers of ice cream, separated by cookie crumbles, with no actual cake content. Sacreligious but delicious!

Mostly it is very hard, though fondant icing is softer. Anything as soft as eg butter icing would not be on top of a cake, only in the middle; you don't want people's hands to get messy when eating the cake.

And on that subject, eating cake with a fork is seen as very pretentious. It is usually confined to fancy foreign things like "Black Forest Gateau" which are eaten as desserts (with fork and spoon), not, like cake, as a thing at teatime, elevenses or some other time during the day between proper meals.

I am terminally confused about terminology. I grew up in the US South, and it was always "icing" in my family. Since when is that only a British thing?

I had LEMON BUTTERCREAM for the first time the other day. On a yellow cake layered with lemon curd and topped with--something lemonier and tarter than curd, but damper than the buttercream. OH GOD, MY MOUTH IS STILL ORGASMING.

Man, I eat Hostess Cupcakes with a fork because I'm an extreme klutz and hate when it breaks and lands in my lap. Black Forest Gateau? I learn a new term every day (even if it sounds WTfy). My grandma called it Schwarzwälder Kirschtorte (sp.?) but Black Forest cake was easier to say.

I would recommend divinity for toping cakes. Egg white, honey and flavour extract whipped in a double boiler till fluffy and spread on while still warm and foamy. Less than a cup of ingredients but covers a entire double stack cake.
