Irony ([info]isntitironic) wrote in [info]otf_wank,
My family calls it Cow Pie, on account of it being made of cow (plus saying 'cow pie' is really funny when all the children in a family are under twelve). And we make it like this:

1/4 cup butter or margarine
1 large onion, chopped
1 lb ground beef
1 tsp salt
1 tsp thyme
1/4 tsp pepper
1/2 cup undiluted beef stock
1 cup mashed carrots
2 cups mashed potatoes

Preaheat oven to 350F. Grease a 1 1/2 quart casserole.

In a frypan, heat the butter until foamy. Add the onions and cook until transparent, then add the beef and cook until lightly browned. Season with the spices and blend in the stock. Turn into prepared casserole and spoon first carrots and then mashed potatoes over the top to make three layers.

Bake for 30 minutes or until potatoes begin to brown, and serve with tossed salad. Makes 4 servings.
