My breaducation, let me show you it
Bread wank. I've never been so happy.

[info]bellasmommy posts some step-by-step photos on how to make baguettes. In her description, she mentions using a bit of sugar, as well as an egg wash. There is also a mention of using the microwave to proof the dough, and using scissors rather than a razor to score the loaves.

The finished loaves look lovely, and [info]bellasmommy says, "These loaves are awesome. The outside is lightly crusty, the inside is light and chewy and fluffy." Great, right?

Oh wait. According to [info]schlake, SHE'S DOING IT WRONG. The finished product is obviously not bread, but some demonspawn of yeast and flour.

(Now I want a macro of Senator Vreenak holding a baguette, hissing "It's a FAAAAAAAKE!") (Which, thanks to nam_jai, we now have!

Can I help? Soda bread is a traditional holiday food in my family, because you don't have to rely on finicky little fungi to make it rise. (My mother has no patience for yeast.) And it tastes good for breakfast.

Oh, I know about soda bread, as I've made it with my Nan many times and it's my favourite bread (whether it be brown, white, treacle or fruity).

It's not just good for breakfast, it's good for almost anything! I'm on holiday at the moment and here in wisconsin the bakers seem to think that you use yeast for it :(

When I said 'except soda bread', I meant that I knew about that in real life, not just from a manga :D

Ah.

Yeah. Last time I made it was for St. Patrick's Day and it was gone within 48 hours. Then again, that seems to happen with all bread in my house, yeast or soda. (I live alone, too... I enjoy bread)

I tend to make bread when I'm flat broke of a weekend, because home baked bread, butter and maybe some cheese makes you understand why in Johanna Spyri's Heidi, the eponymous kid is super fit and lively after a summer in the Alps on little more than bread and cheese.

And kneading bread is an ace way to destress your shoulders.

Yes! Our finances are pretty slim at the moment, but I bake lots of bread so nobody feels deprived. :-D We don't go out to eat much, but nobody cares.

...I feel some baking coming on.

(I use a machine, tho. Less mess, less chance of the kids flingin' it everywhere.)

According to the nice lady who ran an Irish bookshop once here in NYC and who I asked about this -- the reason you'll find a lot of "soda bread" recipes that include yeast here in the U.S. is because those are probably recipes that got handed down from 1st-Generation Irish immigrants in the 1800's, who when they got to the U.S. and started doing better economically than they had in Ireland, started changing their family recipes because they were all, "whee, let's add yeast because we can AFFORD it now!"

Just the soda and buttermilk does just fine for me, though.

...but, but, but... Yeast will cheerfully come down from the air so you can make bread with it!

(don't mind me, I make sourdough, and yes starters can be a finicky bitch to deal with, but it's totally free yeast, darnit!)
