My breaducation, let me show you it
Bread wank. I've never been so happy.

[info]bellasmommy posts some step-by-step photos on how to make baguettes. In her description, she mentions using a bit of sugar, as well as an egg wash. There is also a mention of using the microwave to proof the dough, and using scissors rather than a razor to score the loaves.

The finished loaves look lovely, and [info]bellasmommy says, "These loaves are awesome. The outside is lightly crusty, the inside is light and chewy and fluffy." Great, right?

Oh wait. According to [info]schlake, SHE'S DOING IT WRONG. The finished product is obviously not bread, but some demonspawn of yeast and flour.

(Now I want a macro of Senator Vreenak holding a baguette, hissing "It's a FAAAAAAAKE!") (Which, thanks to nam_jai, we now have!

I consider myself a keen cook. Generally, I like doing stuff from scratch...

But srsly, if someone tells me a faster way of doing something that works, I want. I cook for the purposes of eating the product, not for spending bloody hours in the preparation. I make bread from scratch, the slow way, but that's only because all around me have chosen to ignore the heavy hints for a breadmaking machine.

The first time I made homemade flatbreads, I faithfully followed the recipe including foaming up real live yeast. It didn't rise.

Next go, I used easy-blend packet yeast powder, I've never looked back. Science is sometimes there for a good reason.

If easy-blend packet yeast powder is cheating, I'm never going to cook again.

(Well, I've had better results with "live" yeast so I love it, but if that sort of thing is cheating I'm screwed.)

I say, if it works for you, then the method is right. The results are what matters. Possibly, I got a duff batch of live yeast.

The other thing is that when I was hard-core into bread-making I used to buy it in bulk from the bakery in which case it's dirt cheap. So that helped too. But yeah, whatever works is the essential idea here.

I occassionally like taking a Sunday with my mom or myself and making yeast-bread, or one of those intricate recipies from that unfunny wank a little while back. It takes all day, and I enjoy myself, and eat the tasty food (or not, if something goes wrong :D).

But most of the time? The quick way is better cuz I'll actually make it.

Yes! Once in a while I like taking all day at something. But mostly, I need good food in a reasonable amount of time. Is that so much to ask?

Is why I own a bread machine. Adds much more in enjoyment than is expended in effort.

Garage sales are your friend! A lot of people got bread machines a few years ago when it was trendy, and are now realizing they don't use them enough to excuse the space they take up. That's where I got my first one, and now there's no going back!!!

(My second one, which is larger, came from my mother-in-law who bought hers and never used it.)

My godmom put like three bread machines in her cousin's yard sales...because she didn't have room for them. Woman's getting another one for Christmas, because I want real bread that's not Sunbeam, damn it.
