People can't be an assault victims until they've been criticized
The CBC reports a story about a 66-year-old missionary, Eloise Bergen, and her husband who was assaulted in Kenya earlier this year, and recently testified against her assaulters. People feel the need to state their opinions in the comments:

donnico: maybe the Indigenous people of Africa don't want to be 'civilized and christianized'.

RogerKolbe: [replying to donnico] Then don't complain when the Janjaweed dismembers live victims, when baby girls are raped to cure aids, or slavery runs rampant.

Your type is usually at the front of the line when atrocities happen, crying 'we should do something!"

clearlight makes several snarky comments, all along the lines of "Religious fools rush in where rational beings fear to tread. ;-)" and all with a passive aggressive wink emoticon at the end.

AlanHarrison: There should be a special tax put on all travel to dangerous destinations to fund the health care and rehabilitation that people require when they return....

I bet you that if these people had just stayed in Canada, they wouldn't have been beaten and raped. But they made a conscious decision to go somewhere dangerous. I also made a conscious decision to smoke my cigars and I have to pay a SHEEEEEEEEE-ATSU load of tax to do so. Fair's fair!

There are no people who are beaten or raped in Canada. No way.

skippi: I have read that people who can genuinely forgive someone who has wronged them heal completely and more quickly than those who cannot. Either the Bergens are the living proof of that or he and/or she are ticking time bombs. I sincerely hope it is the former.

Victims must forgive their attackers or else they aren't good Christians, and may one day kill other people!

This story has been widely reported by Canadian media, so there are even more choice comments, including an opinion piece and replies on the Globe and Mail site. There are also articles from when the assault occurred, including a longer comment thread at the original CBC article.

ETA: Sorry, was a mispost (the comments I originally found were wanky rather than plain depressing, and I forgot to change the field). The recipes sound delicious, though.

I've got some mozzarella cheese that I'd like to do something more creative with than lasagna. Suggestions?

Oooh! Yummy! I have no ideas as I usually just eat the mozzarella straight out of the package. *is hungry now*

Is it REAL mozzarella, or mass produced reproduction of said cheese? Because if it's honest to goodness mozzarella... I'll be over in the corner, wishing I was you.

*can only get that during the summer for artisan farmer's markets*

It's the kind that comes in a package from the grocery store, but I can get the real stuff if I head to the Strip or Bloomfield (two of Pittsburgh's neighborhoods with good ethnic grocery stores). So if it was a recipe that was really special, I might be willing to make the trip.

I was just wondering because I miss the real stuff this time of year. I don't have anything super-special in mind. I'd probably just make a from-scratch pepperoni/green pepper pizza myself. [Love Italian food, hate fast food grease, so usually make it myself]

[But because I can't edit my comment, I'll ETA this: kraftfoods.com and America's Test Kitchen have never let me down yet!]

I miss living in Bloomfield. :( I like being out here in the South Side well enough, but I miss the energy.

I've been on a pizza-making kick (kind of a subsidiary of my bread-making kick), so that's how I'd use the cheese. If you want, when I get home, I can provide the recipe I've been using for pizza dough.

Personally I like to go to Geegle and get some of those cheap undried fettuccini noodles they sell, and some heavy cream and butter and fresh garlic. Cut the mozzarella into tiny cubes, put the pint of cream on to boil with about a quarter-cube of butter and a couple of chunks of garlic. When it's roiling, throw in the cheese a bit at a time, stirring constantly until it's all melted; don't turn it up too high or the sauce will clarify and you'll have chunks again. Throw the noodles into some boiling water for like two minutes, and then drain them, tip the sauce into the pot with them, stir, and devour ALL OF IT NONE FOR ANYBODY ELSE AT ALL.
(I like steaming a bit of broccoli and tossing it in at the last minute, too. Mmmmmmmmm. Also, if you cube and cook a couple of chicken breasts, they go in a treat, and make the sauce more savory.)
Damn you, I am HUNGRY now.

Tomato and mozzarella salad -
Grape tomatoes (about 1 mozzarella to 2 grape tomatoes for proportions)
Various chopped herbs (basil, oregano, chives, etc.)
Minced onion
Cubed cheese

Dressing =
2 oil to 1 of lemon juice (one lemon will do about one average package of mozzarella)
Salt, pepper, red pepper flake, pinch of parmesan (grated)

Could be made the night before, but leave out the herbs (they'll turn black) and the cheese (will get a hard coating from the acid.) Serve on lettuce, sprinkle in a hot brothy soup, have as a side dish. Nice with grilled meat. Keeps for about a day before degrading. Good in summer.

This isn't creative, like, at all, but one of my favorite childhood comfort foods is bits of mozzarella in a bowl of spaghetti sauce. Just microwave it until it's melty, then stir it up and eat it with a spoon. Mmm, delicious cheese-and-sauce soup. *wanders off to make some*

Oh wow. This has the perfect effort to deliciousness ratio, and with the weather as cold it is and me in the mood I'm in, it's so comforting too. I made it with mushroom tomato sauce and am dipping Triscuits in. SO GOOD.

(reposted for relevance)

Are they Rosemary and Olive Oil Triscuits? These are insanely good. And that's a segue into a recipe for an appetizer/snack-

place fresh tomato slices (triscuit-sized) on the crackers and drizzle with extra virgin olive oil, herbs/seasonings of your choice (I just use a little lemon pepper) and a little shaved or grated hard cheese (asiago, parmesan) on top. But you need to use the rosemary triscuits.

Toasted on bread until it's melty, then eat with French Onion Soup.

I prefer making my own French Onion Soup, but the packet stuff is fine!

Fried Sandwiches (Heart Attacks waiting to happen)
some Spicy Dijon mustard or condiment of your choice (if you're feeling Italian, tiny amounts of spaghetti sauce work well)
8 slices buttered bread
4 or more slices cheese (mozzarella is especially nom-able)
1 medium tomato, sliced
2 egg whites (can inclide yolks if desired)
1 tbsp oil
salt and pepper
oil for shallow frying

Butter bread slices on one side only. Spread the mustard over the buttered side. Assemble bread, tomato and cheese into sandwiches, butter side out.
Beat oil and egg together. Add salt and pepper to taste.
Dip sandwiches in oil/egg mixture.
Heat oil in frying pan, fry 2 sandwiches at a time till golden brown. Drain on paper towel, nom.

You can use other cheeses and fancy sandwich fixings like bacon or mushrooms or eggs, but I find this works well.

Roast a bulb of garlic and squish the cloves into the bowl of a blender with an ounce of balsamic vinegar and two ounces of good olive oil, a bit of salt, some freshly ground pepper, and (oregano and or rosemary and or thyme, or fresh basil) and whiz it up into dressing.

Roast and peal a red pepper and chop. Drain and chop a can of good tomatoes. (In summer, peal and chop the best fresh tomatoes you can find)

Cube the mozzarrella and mix everything together.

I like this best as a salad, but you can also toss it with hot pasta, or fill an omelet with it, or put it on slices of good bread and slide it under the grill. It's good with an anchovy thrown in the dressing, if you like anchovies.
