Be clairvoyant for when you get a chocolate chip cookie fix and put the butter out to soften the night before.

Seriously, that's usually why I have to microwave the butter... wanting comfort food and not planning ahead.

Wait, overnight? Ew. Maybe my family is more anal than most, but our rule was that if food had been left out of the fridge more than a few hours it was supposed to be thrown out.

In the pre-microwave days we would do a fast and dirty version of a double boiler - heat a pan of water, then put a smaller pan with the butter in it in the bigger pan.

lol My family leaves butter out ALL THE TIME. It never goes in the fridge unless we're leaving town for a few days. I think we just use enough butter to not have it sitting around that long.

Then again, we also keep extra bacon grease in a jar near the stove.

I guess I should add that this only applies to the stick of butter currently in use. Butter that is still in its wrapper and box is in the fridge. *whew*

We store extra butter in the fridge, but the stick we're currently using stays in a butter dish in the cupboard, unless it's unusually hot out. Butter doesn't go rancid very quickly, and it certainly doesn't grow mold.

Butter and cheese were pretty much invented to preserve dairy when you didn't have a way to keep it cool, so keeping butter out overnight is really just allowing it to live up to its real purpose! You are helping that stick of butter be all it can be!
