simple coconut cake Measurements are in Australian. Which may or may not be a mix of metric and imperial, depending on how I learned the recipe. 125g butter 1/2 cup milk 1 egg 1/2 cup sugar 1 cup flour 1 cup desiccated coconut 1 tsp vanilla essence Cream butter and sugar, add egg, milk, and vanilla essence. Sift in flour, add coconut, and stir well. Bake in a 180C oven for 30-40 minutes, or until skewer comes out clean. Drizzle with lemon icing (lemon juice and icing sugar). Moist, simple, sweet, and utterly delish. It's the only cake recipe I know off by heart. :) Post a comment in response: |
