Green Goddess has some vegetarian options, and my conference comrade went there every day for lunch. She loved it. (Be prepared for a wait, though. Place is tiny.)
We tried to go to a place called Satsuma, but they closed at 7 (and it was a goddamn trek from Canal Street). They were supposed to have some of the best vegetable dishes in Nola.
