Enchilada Casserole
This one's a favorite in my household, but we don't actually have any sort of recipe written down, so this is all off the top of my head.

Ingredients:
Small corn tortillas
1 20 oz. can of enchilada sauce (I like the green enchilada sauce, but red works just as well)
Cheese
Shredded chicken or pork, or ground beef

Step 1: Cook the meat. I like to do pork in the slow cooker and then shred it. But when I'm lazy, I'll buy a pack of pre-shredded chicken at the grocery store.

Step 2: Cover the bottom of your casserole dish with tortillas

Step 3: Cover tortillas in a thin layer of enchilada sauce.

Step 4: Add a layer of cheese and meat

Step 5: Continue layering tortillas, sauce, cheese and meat until your casserole dish looks full enough.

Step 6: Cook at 375 for about 20 minutes.
