Wanky BNF: RL Version
Small, but it just goes to show that creator entitlement and pomposity extends far beyond fandom.

Background: Sylvia's Enchilada Kitchen is a Mexican restaurant in Houston that gets critically lauded at every turn. Also, the Houston Chronicle runs a newspaper segment where people can air their grievances against a restaurant wherein they had a bad experience. Also also, the owner/operator of Sylvia's can't take criticism.

Hilarity ensues. (WARNING: There's some race!fail in the comments, so read at your own risk.)

Thank you for the opportunity to respond to Ms. Griffin’s letter.

First, I would like to say that I am sorry Ms. Griffin was unsatisfied with any of the menu items she was served during her recent lunch at my restaurant.

Unfortunately, from time to time we do have a guest that dines with us who feels our food does meet their expectations. Throughout my 35 years in the food business, from research and development as a food scientist, to sales and marketing for a national food company, to owning a three restaurants and a food truck, I have concluded that food is very subjective, and it is impossible to please every single guest that we serve.

I worked tirelessly on each of my recipes to create the most authentic flavors possible. I use only the highest quality of the freshest ingredients available to create each dish that we serve. Through years of interacting with our customers, I have concluded that our most loyal customers are those with roots in South Texas, people of Mexican decent, and those that are knowledgeable about food. Our customer base is comprised of people that drive from all across our great city to dine with us.

In reference to some of the points made in Ms. Griffin’s letter:

1.) We do not and have never cooked with lard.

2.) Our complimentary salsa is served warm because it is freshly cooked with plenty of fresh herbs and spices, and we only use fresh tomatoes in the recipe. We do not use canned tomatoes. Our salsa is a favorite of our customers and is “medium heat,” which is what the vast majority of our customers prefer. We do offer a fresh habanero salsa for those customers who want more heat in their salsa, and it is available on request.

3.) Our chile con queso is described as cheesy and creamy, not spicy. It is a recipe that was recently selected as one of the top three chile con quesos in Houston, and our customers love it so much they buy it by the quart!

4.) Our chile rellenos are made fresh to order and have a light batter. Additionally, the recipe was never intended to be crispy nor does the menu describe the batter as crispy.

5.) The day of the week Ms, Griffin dined with us was a Tuesday, which is normally our slowest day of the week, yet we had a full restaurant at 11:30 am. By the time she placed her order at 12:40 p.m., the lunch rush was ending and that is the reason for the less than a full dining room.

6.) Her dining companions ordered the Mission Enchiladas, ... and the Encino ... . Our cheese enchiladas, with my signature chile gravy was selected by Texas Monthly as one of the ‘Top Ten Iconic Foods of Texas’ in its April 2011 issue, so both dishes had the same chile gravy, so of course “everything tasted the same.”

As a restaurant owner and chef, I have dedicated my life, as well as all my energy, passion and thought to providing the highest quality of food available to my customers.


It's...it's so beautiful. And rude. And incredibly condescending. Too bad us Houstonians are so deprived of Mexican food that we don't know quality when we eat it.

I want some too, but it's Passover so tortillas, rice, and beans are out even for my not-so-strict self. I'll wait a few days.

I think so, but unleavened bread has to be made specially within a certain time period to count as kosher for Passover.

Though there may be people who do eat tortillas on Passover.

(I've had years where I haven't paid much attention to Passover at all, so I'm not crying foul on anyone's opinion.)

Because Judaism is wacky.

No one has ever been able to explain to me adequately how "no leavened bread" gets expanded to "no grains at all, unless they've been made into matzah under the direction of a rabbi, and then ground up for use in cooking". You can't even eat kerneled corn. (Mind you, the restrictions are different depending on your level of orthodoxy and your ethnic/cultural group within Judaism.)

Pesach is a favorite holiday of mine, but yeah...

Seriously. There's a place on the other side of town that does the best chile en nogada I've ever had, but I'm far too broke to go out to eat.

Oh well. Freezer burrito it is.

My favorite Mexican place has seen a price creep on its menu for the past few years unfortunately. It's no longer a good bargain for their portion sizes anymore. :(

I finally got around to visiting the local, "authentic" Mexican place in town, and it was so bland and overpriced. This wank is just making me sad.

There are no good Mexican places where I live, at least none that aren't incredibly expensive, and I can't try those. I miss it horribly.

So... anyone got good, simple recipes for Mexican food?

Enchilada Casserole

This one's a favorite in my household, but we don't actually have any sort of recipe written down, so this is all off the top of my head.

Ingredients:
Small corn tortillas
1 20 oz. can of enchilada sauce (I like the green enchilada sauce, but red works just as well)
Cheese
Shredded chicken or pork, or ground beef

Step 1: Cook the meat. I like to do pork in the slow cooker and then shred it. But when I'm lazy, I'll buy a pack of pre-shredded chicken at the grocery store.

Step 2: Cover the bottom of your casserole dish with tortillas

Step 3: Cover tortillas in a thin layer of enchilada sauce.

Step 4: Add a layer of cheese and meat

Step 5: Continue layering tortillas, sauce, cheese and meat until your casserole dish looks full enough.

Step 6: Cook at 375 for about 20 minutes.

This isn't really Mexican food but it has Mexican ingredients... Also off the top of my head as the cookbook disappeared in my divorce...

1 ready-made pizza crust
1 can refried beans (I use the vegetarian kind since I'm a vegetarian but I'm sure the traditional ones work too.)
1 jar salsa or container fresh salsa, preferably a bit on the chunky side (or use your own salsa recipe if you're really ambitious.)
Shredded cheese

Spread beans over pizza crust and spread salsa over beans. Sprinkle cheese over that and put it a 350 degree oven until bubbly. It actually tastes surprisingly good even without the cheese, though you want to be careful not to overcook it. And if you're not a vegetarian you could presumably brown some meat and put that under the cheese.

Again, not exactly "Mexican food" but pretty good and not too expensive if you can get a pizza crust that doesn't cost too much.

My mom used to make this all the time when I was a kid. So yummy. We usually put ground beef in it, too.

I was surprised at how good it was when I made it! To be fair, I'm pretty fond of refried beans.

Now I want to make it again. I hope I can find a pizza crust at the store next week.

Oh. I'm sorry. (England is lovely and I have good friends there and always enjoy my visits, but during one trip I spent a day on the side with an old friend of my mother's, who, when it came time to get dinner, mentioned a Tex-Mex place (because I had been away from the US for a month and was missing burritos hardcore) - and all I had to do was look at her and she immediately said "no, that's a terrible idea, I know a good restaurant on the next block instead". (She and my mother grew up together in LA, I was born in SF (and live there now, though I didn't spend my whole life there), sub-par Mexican is just... not acceptable.)
