I may be weird, but I like the imagery of the new name a lot better. I'd be much more willing to check out a bookstore called "Waterstones" and less likely to check out one called "Waterstone's". The first one sounds like it may be run by hippies and contain lots of interesting books, the second one sounds stodgy and like it would contain law books or something.
