Samy also seems to have come to a place where a significant portion of his energy when dealing with Amy goes to "making sure she doesn't get pissed off." I could see her suggesting it first just as a way to restore the restaurant's "good name" and (after a bit of convincing) he went with it just in an effort to keep her happy.
See also: Why he doesn't tell her when food gets sent back, or that when he does, he joins in the petty "they said it's raw, BURN IT TO A CRISP AND SEND IT BACK TO HIM." Which also kind of lends itself to the theory that it's not a restaurant that he's interested in running.
