Carrots are easy! And I had really good luck this year with planting-then-ignoring radishes, 'garden' beans (the package didn't get any more specific, oddly), and cucumbers (though those had a rough start). Plus seeds'll be cheap in the next couple months as they try to get rid of this years' inventory. I usually try to stock up on seeds and bulbs in autumn :)
