Ruby has green eyes...wanted to help Sam & Dean...do you think maybe she's family?
...the plot thickens. Demons can possess others, yes, but can they change certain features, such as eye color?
...or maybe seek out hosts similar to their former human forms?
...maybe even others in their lineage? Would explain Azazel's interest in Sam winning the "contest".
